METZ: lightweight kitchen knives for versatile use

They are designed to fulfill the most sophisticated demands in regard to material and functionality. The Metz knives by Carl Mertens are inspired by Far Eastern forms and have extra broad blades made out of rustproof chrome molybdenum vanadium steel. The word "Metz" comes from the local dialect in Solingen, the "City of Blades", and means "knife". This choice of name refers to the tradition of Solingen as a center of blade and knife manufacturing, renowned not only in Germany, but also internationally.
It takes around 25-30 single production steps to manufacture a METZ kitchen knife. It is made out of chromium molybdenum steel, which is perfect for high quality knives, because it offers a good combination of high and long-lasting sharpness, rust resistance and is easy to be sharpened after a long usage. The blade of a METZ knife is cut out of 4 mm thick knife steel and then further processed with laser and water jet cutting. This allows a very precise manufacturing. The blade‘s tang is visible along the handle and shows the original steel thickness. Unlike forged blades, the METZ knives don‘t have a bolster (the junction between handle and blade). Thanks to their manufacturing, METZ knives are much more lightweight than forged knives, which makes them very easy to use also for laypersons.
